Happy Star Wars Day. May the fourth be with you.
I have four boys who love Star Wars (I've taught them well). Tank could hum the Imperial March (Darth Vader's song) from the age of eighteen months. The times I have tripped over Star Wars toys on the floor over the years probably numbers in the thousands. We've read dozens of Star Wars books. And it isn't uncommon to hear Star Wars quoted or referenced in daily conversation.
I learned about Star Wars Day a year or two ago. Of course we had to celebrate. We decided to mark the occasion with Yoda Soda and Wookiee Cookies (because they're "Chewie". Get it? Ha ha.)
There is an official Star Wars cookbook that has recipes for these things--I know because my kids have checked it out from the school library a couple of times--but I just decided to wing it.
The Yoda Soda is just lemon-lime soda with lime sherbet. I had another idea after the fact that we're going to try next time. If it works out I'll share it. I went rogue with the Wookiee Cookies too. The original recipe can be found online but it has chocolate and cinnamon and, call me weird, but I don't like chocolate and cinnamon together. Instead I used this recipe with a few slight modifications.
Here's my version:
3 sticks (1 1/2 cups) butter, softened
1 1/2 cups brown sugar, packed
1/2 cup white sugar
4 eggs, room temperature
2 teaspoons vanilla
2 teaspoons baking soda
1/4 teaspoon salt
1 large package chocolate instant pudding
4 1/2 cups flour
1 cup nuts, chopped (pecans or almonds preferred)
1 cup Heath bars, chopped
1 cup milk chocolate chips*
1 cup shredded coconut--I thought the coconut might give the cookies a "hairy" appearance. ;)
Cream together the butter and sugars. Add the eggs one at a time. Scrape the sides of the bowl and continue mixing. Add the vanilla, soda, salt and pudding mix. Scrape the bowl again. Mix in the flour a half cup at a time until well incorporated. Stir in the nuts, chopped candy bar, coconut and chocolate chips. Using a small cookie scoop, drop about balls of dough about two inches apart onto a Silpat) or parchment paper) lined baking sheet. Bake for 10 minutes at 350 degrees. Remove from oven and allow to sit on cookie sheet for two minutes before removing to a wire rack to cool completely. Makes about 8 dozen chewy cookies.
So, think you might try them? "Do or do not. There is no try."
*Next time I'd omit these and add an additional cup of coconut.
I think I'll have a few right now with a glass of cold milk. I'm hanging out here all by my lonesome watching Monk (maybe I should be watching Star Wars, but I'm going to bed very soon). All five of my guys are at a father/sons camp out tonight ("Luke, I am your father"). Too bad none of them has THIS sleeping bag. So awesome, right?
